Job Duties and Responsibilities :
• Cook any food on a daily basis according to business requirements
• Summarise the main duties and responsibilities of the role – this should be what the job holder spends 80% of their time doing. Remember to focus on the reason and outcome, not the task.
• Ensures proper daily preparation and execution of menu items within the station.
• Directly manages food production and waste generated by junior chefs.
• Gives tasks to Junior Sous Chef, Chef de Partie, Demi and Commis Chefs and monitor that they are carried out in the correct manner.
• Keeps the section clean and sanitized, while following HACCP principles.
• Control the Chinese specialty section for which responsible.
Job Requirements and Qualifications :
• Have experience & exposure to multi-national cuisines.
• Five to six years restaurant/ hotel experience, 5* star establishment.
• Firm understanding & fully capable of executing all five basic cooking methods. i.e. – grilling, sautéing, steaming, braising & roasting.
• Executing knife skills in a confident, accurate & timely manner.
• 2-3 years of apprenticeship.
